Curry Cauliflower Steak with Cilantro Yogurt and Pickled Red Onion

Ingredients

For Cauliflower Steak

  • 1 large head cauliflower, cut into ¾ inch steaks
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 3 Tbsp curry powder
  • 2 tsp brown sugar
  • 1 tsp salt
  • ¼ cup olive oil
  • 1 lemon, juiced

 

For Pickled Red Onion

  • 1 red onion, julienned
  • 1 c white vinegar
  • ⅔ c water
  • ⅓ c sugar
  • 1 pinch salt

 

For Cilantro Yogurt

  • 1 lime zest and juice
  • ¼ c Greek yogurt
  • 2 Tbsp chopped cilantro

 

Directions

For the Cauliflower Steak

  1. Preheat oven to 425°F.
  2. Mix garlic powder, onion powder, curry powder, brown sugar and salt in small bowl.
  3. Toss cauliflower in lemon juice and olive oil.
  4. Season both sides of cauliflower with curry mixture.
  5. Sear cauliflower in cast iron pan, flip and put in oven for 8-12 minutes.

 

For Pickled Red Onion

  1. Bring sugar, water, salt, and vinegar to a boil. Stir until sugar and salt are fully dissolved.
  2. Pour over julienned onion.
  3. Let cool

 

For Cilantro Yogurt

  1. Mix all ingredients in small bowl

 

Serve with brown rice or any of your favorite sides!
