Ingredients
For the Dressing
- 1 1/4 c mayonnaise
- juice of 1 lime
- 1 fresh jalapeño, diced finely (add more if you like it spicier)
- 1 head roasted garlic
- smoked paprika to taste
- cumin to taste
- Adobo seasoning to taste
- 1/2 bunch fresh cilantro, chopped
For the Salad
- 10-12 ears of fresh sweet corn, boiled and cut off of the cob
- 1 medium red onion, diced
- cotija cheese to taste
- Tajín to taste
Directions
For the Dressing
- Mix together all dressing ingredients. Set aside.
For the Salad
- Combine corn and onion in a large bowl.
- Pour dressing on top. Mix until evenly distributed.
- Top with cotija cheese and Tajín.
